Healthy Tidbit about Spinach

Did you know that there are 3 different types of spinach?  There is the savoy, which is dark green and curly.  There also is the semi-savoy, which is not as curly and then there is the flat leaf.  Did you know that when you cook fresh spinach, it will reduce by 3/4??!!  Hope you enjoy our healthy spinach recipe for this month.
