Heat oven to 425 degrees. Place fillets in greased baking dish (9x9x2). Season with salt and pepper. Add salt to egg white and whip until stiff but not too dry. Fold in mayo and spinach and herb mix. Spoon onto fillets. Bake about 12 minutes or until flaky. Serves 4 Cajun Shrimp Salad
Mix all ingredients. Chill thoroughly. Serve on cold crisp lettuce with tomato wedges, olives and crackers. Serves 4 Cajun Cod
Spread Cajun dip over fillets, then dredge pieces in flour to coat. Fry in hot oil until brown and tender. Drain on paper towels. Serve with your favorite tartar sauce or lemon wedges. Serves 4.
