Cajun Shrimp Salad

Ingredients: 

1 cup chopped cooked shrimp

1 cup diced celery

1/4 cup diced red onions or scallions

1-2 tsp. lemon juice

1/3 to 1/2 cup mayonnaise (enough to coat salad)

1 tsp. Cedar Hill Cajun Dip and Seasoning Mix

Sea Salt and Pepper to taste

Mix all ingredients.  Chill several hours.  Serve on cold crisp lettuce with tomato wedges, olives and crackers.

Baked Salmon Fillets

Ingredients: 

4 salmon fillets (about 6 oz. portion)

1 cup bread crumbs

4 Tbsp. melted butter

2 tsp. Cedar Hill Peppermill Seasoning Blend

1-2 tsp. freshly grated lemon peel

Mix Peppermill Seasoning Blend, lemon peel and melted butter.  Brush salmon fillets with butter mixture then coat with breadcrumbs.  Brush with remaining butter mixture.  Bake at 350 degrees for 20-25 minutes or until salmon flakes.  Serve with tartar sauce or lemon wedges.

Italian Eggplant

Ingredients: 

1 large eggplant sliced about 1/2" thick and peeled

Sea salt to sprinkle eggplant

1 egg, beaten

1/2 to 3/4 cup cracker crumbs

1/2 cup shredded parmesan cheese

1/2 cup shredded mozzarella cheese

2 cups Cedar Hill Marinara Sauce Mix (prepared according to directions)

Slice and peel eggplant about 1/2" thick.  Sprinkle with salt and let stand about 30 minutes to draw out excess water.  Dip slices into beaten egg then dip into cracker crumbs.  Saute slices in a small amount of oil until tender and golden brown.  Drain on paper towels.  Top slices with Cedar Hill Marinara Sauce (prepared), parmesan and mozzarella.  Put in a 300 degree oven long enough to melt cheeses.

Garlic Baked Potatoes

Ingredients: 

4 large baking potatoes

4 Tbsp. butter

4 Tbsp. Cedar Hill Garlic & More Dip Mix

2 tsp. Cedar Hill Peppermill Seasoning Blend

Sea Salt to taste

Slice potatoes (cleaned and skins on) lengthwise into eight wedges.  Wrap each 4 potatoes in 4 sheets of foil.  Before closing, sprinkle each sliced potato with 1 Tbsp. butter, 1 Tbsp. Garlic & More Mix and 1/2 tsp. Peppermill Blend and salt to taste.  Bake approximately 1 hour or until tender.

Fresh Spinach Salad

Ingredients: 

1/2# washed, dried spinach then torn into bite size pieces

1 small red onion, sliced thin

1/4 cup diced celery

4 hard cooked eggs, sliced

4 pickled beets, sliced

1/2 to 3/4 cup Cedar Hill Spinach & Herb Dip Mix (prepared according to package directions and thinned down with milk to make it pourable)

Toss spinach, onion, celery, eggs and beets.  Chill well.  Before serving, you can toss lightly with Cedar Hill Spinach & Herb dressing or serve dressing on the side.  Serve with your favorite crackers or toasted bread.

Creamy Spinach & Herb Salad Dressing

Ingredients: 

1 Tbsp. Cedar Hill Spinach & Herb Dip Mix

1/4 cup sour cream (may use reduced fat)

1/4 cup mayonnaise (may use light mayonnaise)

2-3 Tbsp. milk (may use low fat)

 

Combine all ingredients and blend well.  Cover and chill about 2 hours.

Servings: 
Makes about 1/2 cup salad dressing.

Crispy Baked Onion Chicken

Ingredients: 

3 Tbsp. Cedar Hill Toasted Onion Dip Mix


1 Tbsp. Cedar Hill Peppermill Blend


3 Cups Instant Masked Potato Flakes


4 boneless and skinless chicken breasts


2 eggs, beaten

Combine the first 3 ingredients then dip chicken into egg and roll in potato flake mixture.  Place in a greased baking pan and bake at 400 degrees for about 30 minutes or until browned and crispy.   Serve with your favorite tossed salad and veggies.

Southwest Chicken Breasts Baked in Cream

Ingredients: 

You will need:


2-3 pounds of chicken breasts


1 cup cream


1 cup chicken broth


2 tsp. salt


1/8 tsp. black pepper


1 Tbsp. worcestershire sauce


2-3 Tbsp. Cedar Hill Mexican Cheese Ball Mix


 


Heat oven to 300 degrees.  Brown chicken in hot oil and add remaining ingredients.  Cover and bake about 2 hours or until tender.  Note:  You can make a gravy by blending 2 Tbsp. flour and 1/2 cup water into the pan drippings.  Cook 2-3 minutes and if too thick, thin with milk.  Serve chicken with your favorite rice and veggies.

Salsa and Avocado Dip

Ingredients: 

You will need:   3-4 Tbsp. of Cedar Hill Salsa Mix


1/2 tsp. Cedar Hill Garlic & More


1 can (14 oz.) of petite diced tomatoes


1 cup to 1 1/2 cups of avocados that have been peeled and mashed


2 Tbsp. of fresh lime juice


Add salt to taste

Mix all the ingredients well and then chill for one hour.  Serve with your favorite chips or veggies!

Servings: 
Makes about 2 cups of dip, enough for 4-6 people
