Recipes - Vegetarian

Fresh Spinach Salad

  • ½ lb. washed, dried fresh spinach torn into bite size pieces
  • 1 small Bermuda onion, sliced thin
  • ¼ cup diced celery
  • 4 hard cooked eggs, sliced
  • 4 pickled beets, sliced
  • Cedar Hill Spinach Dip
  • Skim milk, for thinning

Toss all ingredients lightly. Chill well.

Before serving, toss lightly with Cedar Hill Spinach Dip (made according to directions). Thin with skim milk.

Serves 6.


Italian Eggplant

  • 1 large eggplant slice
  • 1/2" inch thick and peeled.
  • Salt.
  • Beaten egg.
  • Cracker crumbs.
  • Cedar Hill Spaghetti Sauce
  • Parmesan Cheese
  • Mozarella Cheese

Sprinkle with salt and let stand about 30 minutes to draw out excess water.

Dip slices in beaten egg then in cracker crumbs. Saute in small amount of fat until tender and golden brown. Drain on paper towel.

Top with Cedar Hill Spaghetti Sauce (made according to directions for meatless sauce), parmesan and mozzarella cheese.

Put in oven long enough to melt cheese.

Serves 4


Spicy Mexican Polenta

(Make in your crock pot)

  • 2 to 4 tbsp. Melted butter or margarine
  • 6 cups boiling water
  • 2 cups corn meal
  • 2 tsp. Salt
  • 1 packet Cedar hill Mexican Cheeseball Mix

Use 1 tbsp. Butter to grease the walls of your crock pot. Add spices. Turn setting on high while adding rest of ingredients. Stir well. Cover and cook on low about 6 hours.

To make fried polenta, pour above mixture after cooked into lightly greased loaf pan. Chill overnight and cut into ¾ inch slices and fry in butter until brown.

Serves 8 - 10.
